Chicken Tikka Enchilada

Enchilada is a Mexican dish in which the boiled and pulled chicken are stuffed and rolled inside the tortillas and then its drenched in Enchilada sauce topped with cheese and then baked to perfection! Here the marriage of Indian and Mexican food makes it a lip-smacking dish. The combination of tikka masala, cheese and tortillas with perfectly grilled tikkas makes it extra delicious!

It was a real hit recipe! I took it for a party and everyone over there enjoyed it to the fullest, it makes me so happy! First I thought to post this recipe during Ramadan, but those friends are behind me for the recipe and I decided to share it during this isolation time itself! If you can’t reach your hands on tortilla use leftover chapatis for a healthier and quick option!   

While Kneading for the chapati use half wheat and half all-purpose flour. I’m sure this one will be a hit recipe among you guys too! That Indian flavor along with the Mexican Enchiladas are for sure is treat for our Indian taste buds! They use almost our similar spices and that’s why I love Mexican food!

Ingredients

  • 400gm chicken
  • 1 tsp cumin powder
  • 2 tsp chilly powder
  • 1/4 tsp turmeric powder
  • salt to taste
  • 1 tsp coriander powder
  • Some kasuri methi
  • lemon juice
  • 1 tbsp ginger garlic paste
  • 1 medium-sized onion
  • 1 small bell pepper

For the sauce

  • 2 medium-sized onions finely chopped
  • 2 tsp ginger garlic paste
  • 2 tomatoes pureed
  • 1 tsp cumin powder
  • 1 tbsp chilly powder
  • 1 tsp coriander powder
  • kasuri methi
  • Water as needed
  • Cilantro
  • 2 tbsp fresh cream
  • Salt to taste

Other Ingredients

  • Tortillas 6 to 8
  • Mozzarella Cheese

Method

  1. Marinate chicken with all the ingredients listed and grill it with 2 tbsp oil. When the chicken is half done add the diced onion and bell pepper and cook it until it’s dry and grilled( check the video).Take it out
  2. In the same pan add 2 tbsp oil put the chopped onion(very finely) and ginger garlic along with salt and cook it until soft and translucent.
  3. Add all the spices mentioned under the sauce except Kasuri methi on low flame and cook it.
  4. Add the tomato puree and cook until the rawness is gone.
  5. Pour some water and cook it for some time.
  6. Add cream and kasuri methi mix week.
  7. For some flavor add few chicken chunks in the gravy. Now the sauce and chicken is ready
