As the festive season is here such easy peasy recipes are always handy to feed your family and friends. These dates cake are so soft and moist with a delicious caramely dates flavor in it.
In this recipe, all you need to do is blitz every ingredient in a blender and pour it in a cake tray or muffin tray and bake. You can even cook it on the stovetop on low flame. I used to top it with walnut and a small piece of dates! This is my family’s favorite. Umma used to make it whenever there is a sudden guest that too on the stovetop. It will fluff up like crazy with a spongy texture.

- 10 pitted dates
- 4 eggs
- 1 cup oil
- 3/4th to 1 cup sugar
- 1 cup all-purpose flour
- 1 tsp baking powder
- In a juice machine add the dates, sugar, eggs and oil. Blend it to a smooth mix.
- Add the flour, baking powder and vanilla blend it until everything is incorporated.
- Line baking tray with parchment paper or muffin liner pour it and bake it for 15 to 20 minutes @180 degrees preheated oven.
