The very first cake I baked is this one,and here start my baking addiction.A super delicious cake buttery,nutty,fruity, introduced to me by my Sis-in-law Rehana,as she said that is my husbands favorite just grab the recipe from her and made it the very next moment.
The cake used to say plum cake,very tasty,sweet,buttery,some bites of dates,nuts,vanilla flavoured and all the awesomeness in this cake.Soft and fluffy cake,perfect tea time cake to dip in tea and enjoy each and every bites.
250 gm All purpose flour
250 gm butter
250 gm sugar
1 tspn baking powder
2 n1/2 tblspn caramelized sugar
1tspn Vanilla essence
1/2 cup dates,nuts n cherries
1.Preheat your oven to 180 degree.
2.Separate egg yolks and whites.
3.Cream the egg whites until its stiff .
4.Beat together egg yolks and powdered sugar,then vanilla essence,butter and beat well.
5.Caramel the sugar and pour immediately to the batter and beat well.
6.Sieve flour and baking powder fold in to the batter alternatively by adding egg whites in two addition.
7.Mix dry fruits in some flour(so that it will not sink to the bottom of the pan) and add in to the batter,mix well and pour it to the prepared cake tin and bake for 40 to 45 minutes at 180 degree.
Really you will enjoy every single bite of this tea cake.
