Upside Down Banana Choco Cake


Banana bread or cake!It’s yum!Especially for banana lovers like my son!Anything with banana will make him happy :-)!It has very nice banana flavours in it with chunks of chocolate chips and the caramelized bananas.They are just delicious!


Overriped bananas on my counter results in this caramelized beauties!I used dark brown sugar that’s why dark colour of caramel,not burned 🙁 Here we all enjoyed it!Hope this one will work for you too!If you have overripe bananas and you want to do something interesting with that here is the right option!

First you need to caramelize the sugar and then pour it on the baking tray and arrange bananas on top of it.Then pour the batter of banana cake over it and bake!The aroma while baking was incredibly good!The cake was super soft with the bite of chocolates and flavours of banana!


Ingredients
For caramel layer:

  • 1/4 cup of Unsalted Butter
  • 1/2 cup of Brown Sugar
  • 1/2 tsp of Vanilla Extract
  • 3 Bananas, sliced about 1/2” thick

For cake Batter:

  • 1-1/2 cups of All Purpose Flour
  • 2 tsp of Baking Powder
  • 1/3 cup brown sugar
  • 1/3 cup sugar
  • 1/4 cup (or 50gm)of Unsalted Butter, softened at room temperature
  • 2 Bananas, mashed
  • 2 Eggs
  • 1/2 cup chocolate chips
  • 1 tsp of Vanilla Extract
  • 1/2 cup milk

Method

1) Preheat your oven to 180 degree grease a 9” cake pan with some non-stick spray, and set aside.

2) In a small saucepan, to make the caramel layer, add the butter and brown sugar, bring to a simmer and cook just long enough for the brown sugar to melt,. Remove from the heat and stir in the vanilla

3) Pour the sauce in the bottom of the prepared cake pan, arrange the slices of bananas over it and set aside.

4) In a large bowl, mix together the butter and both kinds of sugar, add the eggs, mashed bananas and vanilla. Using a hand whisk mix everything together until they are well combined.

5) Add the flour, baking powder along with the milk and mix until it comes together.

6) Pour the batter over the banana and caramel layer, carefully transfer to the oven and bake for about 30 to 40 minutes (it might take a little more or less time just keep an eye on it) or until fully cooked through.

7) Remove from the oven, allow it to sit for exactly 5 minutes, then invert it carefully on a platter

8) Allow it to cool for about an hour then slice and serve!


If you want to make it extraordinary serve it with some ice cream and your kids will be more happy!
