A delicious and simple veg korma for all those who are hunting for a new recipe for veg!I know making it tasty and make them eat veg( for a non veg lover )is not an easy task!isn’t it?!Here is a healthy recipe loaded with full of veggies and goodness of green herbs in it!
Hariyali means greenery in Hindi. As per the name the core flavor and color of the curry is all from the green herbs and chilly using in it.I love love the freshness of the mint in any dish…….It adds an exceptional flavor to the dish.{only for mint lovers :-p)}.
The other good thing with this korma is you can have it with pav bun too!That means if you are not in a mood to cook any rotis,make this without much gravy and have it with pav along with some onion.It tasted good.I served the leftovers as a sandwich filling and packed it in tiff-in box for my son(spread some cheese if they love it in that way)
Here i first made a paste with greens and some spices then cook it and mixed the boiled veggies in it.Over to the recipe:
Ingredients
- 1 large onion
- 1 large tomato
To grind
- A bunch of mint leaves
- ” ” coriander leaves
- 3 to 4 green chillies
- 2 cloves garlic
- 1 inch piece ginger
- 1/2 tsp cumin seeds
- 1/2 tsp coriander seeds
Veggies
- 1 big potato
- 1 big carrot
- Some beans
- What ever veg you prefer like green peas,cauliflower..
Other ingredients
- 1/2 of a lime juice
- 1 tsp garam masala
- 1/2 tsp cumin seeds for spluttering
- 1/2 tsp cumin powder (optl)
- 1/2 cup thick coconut milk or 2 tsp fresh cream
- 2 tbsp oil for cooking
Method
- Dice the veggies to cube, boil with salt and keep it aside.
- In a mixer jar grind together all the ingredients listed to grind.
- In a pan pour a tsp of oil, cook onion and tomato with salt,When it’s soft enough switch off the flame and let it cool for some time. Put this to the mixer jar along with the green herbs and puree it to a smooth paste,
- Now in the same pan add a tbsp of oil,splutter 1/2 tsp cumin seeds and pour the the green mix to this and mix well.
- Add 1/2 cup of water and cook it until the rawness of the masalas are gone.
- Now add all the veggies and mix well.
- Add garam masala,cumin powder and lime juice mix well.
- Lastly add fresh cream or coconut milk and let it boil for one last time and switch off the flame.Garnish with mint and coriander leaves.(i used fresh cream- 2tsp fresh cream mixed in 4 tsp water and added)
