Orange & Almond Shortbread Cookie.

These cookies are crunchy,buttery with bites of almonds and flavours of orange in it.Crispy yet melts in mouth in texture.Have you ever tried orange flavour in cookies?If no then try it.It’s total yumminess

It has a refreshing flavour as we are adding fresh orange in it.Perfect for kids that is buttery,fruity,nutty cookies.

Hmm back to the recipe here i used sliced almonds,zest of an orange and juice in the shortbread cookie dough!This one we need to make it to a log and freeze it,then cut to thin slices and bake.Here all enjoyed it!Try it out for sure.One more advantage no egg in this recipe..


Ingredients
  • 1/2 cup (100g) unsalted butter, room temperature
  • 1/2 cup powdered sugar
  • 2 tbsp orange juice
  • 1 cups all-purpose flour 
  • Grated zest of 1/2 an orange (about 1 teaspoons)
  • 1/2 cup sliced almonds

Method
1.Make the dough:
Beat butter, sugar, and orange juice until smooth. Add flour and orange zest mix just until a dough forms. With a spatula, or your hands, gently mix in almonds.


2.Freeze the dough:
On a piece of wax paper, form dough into a rectangular log,8 inch long, 2 inches wide, and 1 inch thick. Wrap log in the butter paper and freeze until firm, At least 1 hour. If freezing longer than 1 day, wrap log again, in plastic wrap
.
3.Bake the shortbread:
Preheat oven to 180 degree. Remove dough from freezer. (If dough has been in freezer a long time and is frozen solid, let it sit at room temperature 30 minutes so it slices without crumbling.)
With a sharp knife, cut dough into 1/4-inch-thick slices; place on ungreased baking sheet at least 1 inch apart. Bake until edges just begin to turn golden, 15 to 20 minutes. Cool 5 minutes on baking sheet.

Keep the dough for this delicate, flavorful cookie in your freezer. Later, you can slice off just what you need from the frozen log of dough and bake.
