Ladies finger is an English sponge fingers.It’s a low density,dry and sweet sponge biscuit
shaped like a large finger.It’s a base for many desserts which is soaked and then layered with custards and cream.
The batter is same like a sponge cake batter.Their unique “finger” shape is the result of piping the batter onto the baking sheet.It will be lightly crispy outside and soft sponge inside.This sponge cake batter will pour in a piping bag and then give it a large finger shape and bake it to 10 minutes.It’s very light and fluffy in texture.
Actually here I made it for a dessert and atlast I hide it from my kids to save some for my dessert!hehe!They enjoyed it.You can make it and store it even the toddlers can enjoy it as its soft and spongy.
Ingredients
- 4 eggs
- 125 gm powdered sugar
- 115 gram All purpose flour
- 2 tspn vanilla essence
- 2 tblspn oil
- a pinch of salt
- Separate the egg yolks and white.Whisk egg whites when its lightly frothy add half of the sugar beat until stiff and fluffy then keep it aside.
- In another bowl whisk together egg yolks remaining sugar and vanilla until light and pale yellow in colour,Add 3 tblspn oil and mix with a spatula
- Now gently fold in your egg whites to the egg yolk mixture.Sieve your flour and salt directly to this egg mix and fold gently until all well combined.
- Preheat your oven to 180 degree.
- Prepare your baking sheet with parchment paper.In a piping bag pour your batter and pipe it to a nine 7cm long finger.Pipe each of them about 1 inch apart as it will spread while baking.

- Bake it for 10 minutes in preheated oven at 180 degree!
When its lightly warm take it out from the wax paper.If its stuck just run a knife trough and loosen it.Lastly powder some icing sugar on top.Enjoy it as is or make some interesting desserts.
