Vegetable Pulao
Healthy Veg.
I know vegetables are the last options for non-veg lovers. But you have to try this recipe as it is very tasty, simple, quick and mainly no much washing pans require,(confused?)hehe! Yes, it’s a one-pot dish, only you need is a pressure cooker. Perfect for a lazy day. Updating the old post with new pictures!
- 2-1/2 cups basmati rice
- 4 cups water(in pressure cooker 1-1/2 cup water for 1 1cup rice)
- 2 onions
- 2 tomatoes
- 5 green chilies
- 1 tbsp ginger
- 1 tbsp garlic
- 1 big carrot
- 1 potato
- Some beans
- Some cauliflower
- lots of coriander leaves
- Â few mint leaves
- 1 tsp chilly powder
- 1 tbsp coriander powder
- 2 tsp pepper powder
- 1 tsp garam masala
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 1 Maggi chicken cube
For spluttering
- Small stick cinnamon
- 2 cloves
- 3 or 4 peppercorns
- 2 tbsp oil
- 2 tbsp ghee
Method
1. Slice the onion tomatoes and chilies. Cut vegetables in small cubes and keep it aside.
2. In a 5litre pressure cooker pour oil and ghee splutter ingredients under spluttering. Then add onion green chilies, ginger, garlic and saute well, put in the chicken cube, add tomatoes and cook well all these, add all powders mix well and cook for 5 minutes then add all the veggies and mix well add finely chopped coriander and mint leaves. In this put the rice and roast for some time. Then pour the boiling water to the pressure cooker keep the flame high and close the lid. When 2 whistles come switch off the flame and let it sit there until full pressure is released.
3. Open the lid mix the rice and immediately transfer it to a hotpot, otherwise the rice will go sticky in the cooker. You can see the perfectly cooked rice in minutes.

Have to try this recipe. It’s delicious with some mint chilly raita and hard-boiled eggs.
Also, you can add some fried cauliflowers in this, green peas, paneer. Whatever veg u like.

I thought about trying this recipe but it looked complicated so I just ordered it form restaurant. Result was a solid and taste is like wow. restaurant near venkateshwar college
