Pineapple Upside Down Cake.
Eggless Cake!
A refreshing cake with fresh pineapples in it.Its an eggless cake totally effortless and very easy to put together.If you are searching for a  good recipe for pineapple upside down cake for long time,here it is.
The pan base is layered with pineapples and caramelized sugar and then pour the cake batter and bake it to perfection.Here no need to caramel the sugar in this recipe I just pour some butter and then added brown sugar and ten spread it and layered with pineapple slices.Its a very simple recipe with a coconut twist in it.
Ingredients
For pineapple
2 tblspn melted butter
1/2 cup brown sugar
7 to 9 slices pineapples
Batter
 1 cup flour
90 grms melted butter
3/4 cup condensed milk
1/2 tspn baking soda
1 tspn baking powder
1 cup coconut milk(or milk)
Method
Preheat the oven to 180
Grease the pan and pour butter and add brown sugar and spread it all over the pan with the help of a pastry brush.
Sieve the dry ingredients and keep it aside
Mix together melted butter,milkmaid then vanilla .then add flour mixture and coconut milk alternatively.It should be in pouring consistency so add milk if you feel like the batter is too thick to adjust.yBatter is ready now pour it gently over the prepared pan and bake it for 40 minutes.See how simple it is.
Look at that lovely caramelized pineapple and soft spongy cake.A wonderful combination,You can serve it with whipped cream as a dessert.
