A sandwich biscuit filled with mixed fruit jam!Sandwich biscuits are about contrast weather its texture or flavours.It was real fun to make and enjoyed by the kids.With a single bite we will fall in love with this red and white beauties.Crispy biscuits with the jam oozing out!

Cookies are best to store in containers for a long period of time.Prepare it and store it in an airtight containers. When ever you need it spread some jam and use!I am sure your kids will love it and of course bakery lovers will definitely do!

Here I used oil instead of butter .It was crisp and yum with the jam inside.You can replace oil with butter if you want that buttery flavour.Just some mixing and the batter is ready.It’s very simple to prepare.Make it for your kids and watch their happy face!

Ingredients

  • 1 n /2 cup all purpose flour
  • 1/2 tspn baking powder
  • 1/2 cup granulated sugar
  • 1/2 cup oil
  • 1 tspn vanilla essence
  • 1/4 cup milk
  • 1 or 2 tspn ghee (just to put together the dough
MethodMix oil,vanilla and powdered sugar very well with a whisk then add flour and baking powder and mix well then add ghee and milk accordingly.Do’t use it all at one go the batter will become loose.If the batter seems sticky put in refrigerator for 15 to 30 minutes.

Then Put the batter in between two butter/wax paper and roll it using a rolling pin with half inch thickness (don/t make it too thick)Now use cookie cutters of 2  different diameters first cut the cookie with big round and arrange it in baking tray.Now for the top of the cookie first cut it with same roundels and then with the small cutter cut the center of the cookie to make a window to see the middle of the filling.
Bake it in the preheated oven for 10 to 14 minutes at 180 degree.
When its cool spread your favourite jam (I used  mixed fruit jam)and sandwich it dust some icing sugar on top and enjoy!
Serve it with chilled milk or tea and enjoy!
