Chicken Katifi Roll
Hello all it’s been a while right? Holy month of Ramadan is here, and as always I’m sharing some easy and delicious recipes for you all to make the life easy and hassle free! May this Ramadan bring peace and prosperity in our life! May Allah ease all the hardships and free our Palestinian Brothers and sisters from what they are suffering right now🤲
Coming back to the first recipe of Ramadan Series 2024, here i came with a simple savoury kunafa roll or savoury kunafa with a lip smacking and simple chicken filling and cheese! Crispy outer layer with a juicy cheesy filling is so good! To make your life more easy, instead of making single rolls you may also set it on a tawa like we do kunafa and cook it on gas top, have it hot and crisp! It has a spicy, tangy and slightly sweet filling that goes well with the outer layer👌👌
Ingredients
- 300 gm Katifi/ Kunafa dough
- 50 gm butter + some olive oil or sunflower oil
- 1 tsp chilly powder or paprika for colour
For filling
- 200 gm boneless chicken
- Boil it with 1 tsp chilly powder and salt.
- 4 to 5 cloves garlic minced
- 2 or 3 green chilies
- 2 tbsp tomato paste or puree of a large tomato
- 1 tbsp ketchup
- coriander leaves
- 1/2 of an onion finely chopped(opt)
Other Ingredients
- Mozzarella cheese
- Kishta or cream(if you are making like kunafa)
Method
- Mix katif with chilly powder and butter, keep it aside.
- Boil the chicken, once the water is dry, pour some oil and shallow fry it. Add the garlic, greenchilies and onion while frying the chicken.
- Once the chicken is done, pour a tbsp of oil on a side of the pan, add tomato paste and sauce cook for a few second and mix with the chicken(refer video)
- pour 1/4 cup water and let it cook until done and dry. Add in the cilantro and switch of the flame.
- Take the long strands of the kunafa dough, place it neately add a tsp of filling, cheese and tightly roll it.
- Bake it on 200 degrees preheated oven for 15 to 20 minutes or until crust is crisp and golden.
- For the kunafa neatly spread the kunafa dough on a tawa, place the filling followed by kishta and cheese, cover it pack tightly. Cook it on low flame until crisp and golden. Flip and cook the other side and enjoy! (You may also bake it!
