Chicken Changezi

Chicken changezi is a rich creamy and mouthwatering dish with silky smooth gravy! It’s a Mughlai Chicken gravy, so it is obvious for its richness and flavor. The chicken is marinated and dry roasted and then coated with a creamy brown onion paste and tomato gravy with some selected spices and dairy!

It’s like a richer version of butter chicken I felt! It will go well with Indian flatbreads. I’m sure kids and adults will love it alike. This restaurant-style rich and silky chicken dish should be tried by all i must say. I served it with batura and was yum. Here the onion is first frying lightly along with some cashew in ghee and then grinding gives a nice flavor to the gravy.

Yes, it’s rich because we are adding cashews, milk and some fresh cream in the gravy which gives a nice silky texture to it. After all, it’s Royal food!! It should be like this, isn’t it?😉 Hope you all will like this! A slightly different taste when compared to butter chicken.

Ingredients

  • 500gm Chicken
  •  1 tsp ginger garlic paste
  • 2 tbsp curds
  •  salt
  • 1 tbsp lemon juice
  • 1/2 tsp red chilly powder

For Gravy

  • 2 tbs ghee
  • 2 onions sliced
  • 6 to 8 Cashewnuts
  • 1/4 cup milk
  • 1 tbsp ginger garlic paste
  • 2 tomatoes pureed
  • 1 tsp coriander powder
  • 1 tsp chilly powder
  • 1 tsp garam masala
  • 1 tbs cream
  • 1 tsp chaat masala
  • 1/2 tsp kasuri methi
  • Salt to taste

Method

  1. Marinate chicken with above-listed ingredients. Keep it aside for 20 to 30 minutes.
  2.  Heat ghee in a kadai or pan add onion and cashew nuts, fry them until the onions turn golden brown. Let it cool down and then grind it into a fine paste.
  3. In the same pan without adding any oil, fry the marinated chicken till it turns dry and golden brown. (chicken will release water let them dries out and then dry roast it) Take it out.
  4. Heat a little ghee add the remaining ginger garlic paste, tomato puree, stir it on high flame. Once the oil starts releasing, add red chili powder, coriander powder, garam masala, chaat masala, dry methi leaves, give it a mix.
  5. Add in the chicken, give it a mix. Add onion-garlic paste, cream, milk and salt mix well. Add 1 cup water and simmer it until done. If you like thick gravy add water carefully. It’s a rich and royal gravy.
