Folded Tortilla Pizza

If you have leftover chicken in the fridge and a pack of tortillas in the pantry, you’re 10 minutes away from a crispy, cheesy, incredibly satisfying meal. This folded tortilla pizza is my go-to for busy weeknights, lazy lunches, or when I want pizza without the fuss of making dough.

It’s crunchy on the outside, melty in the middle, and endlessly customizable. Let’s make it.
Ingredients for Sauce
- 3 large tomatoes
- 3 or 4 cloves of freshly pounded garlic
- 1 or 2 green chilies
- salt & pepper to taste
- oregano
- chilli flakes
- some parsley
For Stuffing
- Leftover chicken
- veggie of your choice
- some prepared pizza sauce
- mayo
- oregano
- pepper
- Mozzarella Cheese
- tortilla
To make pizza sauce

- Heat the oil
In a pan, pour 2 tablespoons of oil and place it over low heat. - Cook the tomatoes
Cut the tomatoes in half and place them cut side down in the pan.
Cover with a lid and cook on a low flame until the tomatoes become soft and mushy.
Add a little water if needed to prevent sticking. - Remove the skins
Once soft, remove the tomatoes from the pan.
Peel off the skins (they should come off easily). - Mash the tomatoes
mash them with a spoon or masher until smooth or slightly chunky, depending on your preference. - Add garlic & spices
Add freshly pounded garlic, chopped green chilies, salt, pepper, oregano, and chili flakes.
Mix well and cook on low heat until the sauce thickens and the raw garlic smell disappears. - Finish with parsley
Turn off the heat and stir in chopped parsley. - Your fresh, flavorful pizza sauce is now ready to spread over your folded tortilla pizza with leftover chicken and cheese 🍕🔥
