Whenever I make this cake, I’m reminded why I fell in love with baking. I truly enjoy making and decorating this cake. There’s something magical about transforming a simple chocolate sponge into a beautiful log that looks straight out of a cozy winter forest!!

Ingredients

  • 4 eggs separated
  • 1 cup sugar
  • 1/2 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1 tsp baking powder
  • A pinch of salt
  • 1 tsp vanilla
  • 1/4th cup oil
  • 1/4th cup milk

For the filling

  • 1 cup whipped cream
  • 2 tbsp chocolate spread
  • 1 or 2 tbsp cocoa powder

METHOD

1. Prepare the Sponge

  1. Preheat oven to 180°C.
  2. Line a sheet pan with parchment paper.
  3. Beat eggs and sugar together until pale, thick, and tripled in volume.
  4. Gently fold in vanilla, milk and oil
  5. Sift flour, cocoa and baking powder, and salt together.
  6. Fold dry ingredients into the egg mixture carefully (do not deflate).

2. Bake

  1. Pour batter evenly into the tray.
  2. Bake for 10–12 minutes, until the cake springs back lightly.
  3. Do not overbake or it will crack.

Roll the Cake

  1. While hot, turn cake onto a clean kitchen towel dusted with powdered sugar.
  2. Peel off parchment paper.
  3. Roll the cake with the towel inside, starting from the short end.
  4. Let cool completely (this prevents cracking later).

Make the Filling

  1. Whip cream, powdered sugar, and vanilla until soft peaks form.
  2. Keep chilled until needed.

5. Fill and Roll

  1. Carefully unroll the cooled cake.
  2. Spread whipped cream evenly, leaving a 1-inch border.
  3. Re-roll gently (without the towel). Chill it.
  4. Prepare a chocolate ganache with 1/2 cup fresh cream and 1 cup chocolate,
  5. Spread it on the log and give the rustic look with the help of a fork.
