Yule Log Cake

Whenever I make this cake, I’m reminded why I fell in love with baking. I truly enjoy making and decorating this cake. There’s something magical about transforming a simple chocolate sponge into a beautiful log that looks straight out of a cozy winter forest!!

Ingredients
- 4 eggs separated
- 1 cup sugar
- 1/2 cup all-purpose flour
- 1/4 cup cocoa powder
- 1 tsp baking powder
- A pinch of salt
- 1 tsp vanilla
- 1/4th cup oil
- 1/4th cup milk
For the filling
- 1 cup whipped cream
- 2 tbsp chocolate spread
- 1 or 2 tbsp cocoa powder
METHOD
1. Prepare the Sponge
- Preheat oven to 180°C.
- Line a sheet pan with parchment paper.
- Beat eggs and sugar together until pale, thick, and tripled in volume.
- Gently fold in vanilla, milk and oil
- Sift flour, cocoa and baking powder, and salt together.
- Fold dry ingredients into the egg mixture carefully (do not deflate).
2. Bake
- Pour batter evenly into the tray.
- Bake for 10–12 minutes, until the cake springs back lightly.
- Do not overbake or it will crack.
Roll the Cake
- While hot, turn cake onto a clean kitchen towel dusted with powdered sugar.
- Peel off parchment paper.
- Roll the cake with the towel inside, starting from the short end.
- Let cool completely (this prevents cracking later).
Make the Filling
- Whip cream, powdered sugar, and vanilla until soft peaks form.
- Keep chilled until needed.
5. Fill and Roll
- Carefully unroll the cooled cake.
- Spread whipped cream evenly, leaving a 1-inch border.
- Re-roll gently (without the towel). Chill it.
- Prepare a chocolate ganache with 1/2 cup fresh cream and 1 cup chocolate,
- Spread it on the log and give the rustic look with the help of a fork.
